About the Festival
The Seven Valleys Wild Food Festival, produced by Lithgow City Council, is a celebration of local food, our untamed landscapes, creativity, and community.
Supported by the NSW Government’s Vibrant Streets Package – Open Streets Program (2025–2028), an initiative that transforms our streets into lively, people-focused spaces with placemaking activations designed to support businesses and bring communities together.
On Saturday 21 February, Main Street Lithgow will close to traffic and open to an evening of vibrant activity. Visitors can explore a curated market of local producers and artisans, enjoy boutique food and drink, and experience live music and cooking demonstrations at the WildFire Kitchen Stage. It is an opportunity to taste, discover, and connect in the heart of Lithgow.
This main event will be complimented by a range of unique satellite experiences. We invite you to stay in the stunning Seven Valleys for a whole weekend of incredible Wild Foodie events.

What is Wild Food?
Wild food comes from an untamed world. It is gathered, foraged, discovered, or produced beyond the boundaries of conventional processes. It may be native or invasive, ancient or new. It can be grown or created with care and attention - whether through traditional methods or wild ways.
Whether foraged or cultivated, prepared in a kitchen or cooked over an open fire, wild food always maintains a deep connection to the wider ecosystem, to community, and to culture.
Wild Foodies are people who imagine future food systems that are sustainable, accessible, and grounded in freedom.
What counts as Wild Food?
Wild-gathered foods may include:
Edible plants, fruits, vegetables, and fungi that grow freely and can be foraged in the wild.
Indigenous bushfoods native to Australia, foraged or sustainably cultivated, strengthening First Nations culture and connection to Country.
Wild-caught fish, crustaceans, insects, and animals harvested from natural environments.
Foods created using wild processes may include:
Cultured foods like cheeses and yoghurt that rely on wild bacteria and mould for unique flavour profiles.
Fermented foods such as sauerkraut, pickles, sourdough bread, meat products, beer, cider, wine and more - using wild yeasts and bacteria to preserve and enhance flavour.
Foods that depend on the symbiotic participation of the wild - such as honey, truffles, and anything requiring wild pollinators or ecological relationships to thrive.
Foods prepared and enjoyed in the wild or over an open fire.
The concept of Wild Food is broad and uplifts many thriving businesses, tourism operators, food producers, and stunning natural landscapes. It has scope to grow and develop. The Seven Valleys Wild Food Festival is an invitation to explore how the wild world nourishes us in so many unique and interesting ways.
